This is my hubby's favorite thing (I can make it with my eyes shut)

Banana Bread

Ingredients:

1 cup white sugar
1/4 cup butter
1 egg
1 1/2 cup flour
1 tsp baking soda
1/4 tsp salt
3-4 mashed bananas

Mix them all together! Bake 350 for about 30 minutes (it always takes longer for me)

I like to add some cinnamon to this recipe too.

This I discovered when I had no income and all I had in the house was rice and soup.

instead of making minute rice w/ water, mix up cream of (mushroom, chicken, celery etc etc) and use it in place of the water!

I love this stuff because it's EXCELLENT reheated!

I don't think I have, but my grandmother's been making them for years and I'm sure she has. A lot of people don't care for the taste of cloves so I'm sure it would be fine

These are about the easiest chocolate chip cookies ever, because you use a cake mix instead of measuring out all the dry ingredients.

They are really good if you substitute a caramel cake mix for the yellow cake mix in the recipe.

CHOCOLATE CHIP 'N OATMEAL COOKIES
(from the Hershey website)

• 1 package (about 18 oz.) yellow cake mix
• 1 cup quick-cooking rolled oats
• 3/4 cup (1-1/2 sticks) butter or margarine, softened
• 2 eggs
• 1 cup HERSHEY'S Semi-Sweet Chocolate Chips

1. Heat oven to 350°F.

2. Combine cake mix, oats, butter and eggs in large bowl; beat until well blended. Stir in chocolate chips. Drop by rounded teaspoons onto ungreased cookie sheet.

3. Bake 10 to 12 minutes or until very lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

Hey fishies!

About a month ago, I posted a message about winning a recipe contest.

This is the recipe that won me the Grand Prize!
(I know it sounds gross -- but it really is delicious!)

Creamed Salmon on Toast

2 tbsp. non-hydrogenated margarine
¼ cup All-purpose flour
2 cups So Good Original soymilk
1 tsp pepper (optional)
1 – 7.5 oz. canned Sockeye Salmon - drained
1 cup frozen small peas - thawed
8 slices 100% whole-wheat bread


Melt the margarine in a medium saucepan.

Add flour and pepper and blend thoroughly with the melted margarine.

Slowly whisk in the So Good soymilk. Reduce heat and cook until thickened, stirring constantly.

Break up the salmon into medium sized pieces and add to the sauce, along with the peas.

Heat through, stirring gently.

Serve with 100% whole wheat toast.

Serves: 4

Also, in my recipe I used canned peas and white bread, but they altered it to make a healthier version. I think mine tastes better, even if it's more fattening.

Here are my families 3 favorite cookies,I am making the smartie ones today

Chewy Chocolate Chip Cookies
2/3 cup shortening
2/3 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
2 tsps vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
1 cup walnuts(optional)
1-12 oz pkg milk chocolate chips
Heat oven to 375 F. Beat together shortening, butter,sugars, eggs and vanilla. Mix the soda and salt in 1 cup flour and beat in. Mix the remaining 2 cups flour in by hand,add nuts (if using)and chocolate chips. The dough will be very stiff. Drop by rounded teaspoonfuls on ungreased cookie sheet and bake for 8-10 minutes. Yield- makes 6 dozen.

Smartie Cookies
1/2 cup butter
1/4 cup sugar
1/4 tsp water
1 cup plus 2 tbsps flour
1/2 tsp salt
1/2 cup brown sugar
1/2 tsp vanilla
1 egg
1 cup smarties
1/2 tsp baking soda
Blend butter and sugar. Beat in vanilla, water and egg. Sift remaining ingredients together and add to sugar and egg mixture. Mix well. Stir in smarties. Drop by spoonfuls onto ungreased cookie sheets. Bake at 375 F for 10-12 mins,or until golden brown.

Peanut Butter Cookies
1/2 cup brown sugar
1/2 cup lard
1-1/2 cups flour
1/2 cup peanut butter
1 egg
1/2 tsp salt
1/2 cup white sugar
1 small tsp baking soda
Dissolve baking soda in a little warm water. Add to other ingredients. Roll into small balls. Press down with fork dipped in flour. Bake at 350 F for about 10 minutes.( Let the cookies cool on the pan for a few minutes or they will break apart )

I make this for my hubby also but i add chocolate chips and buterscotch chips too, it's a nice low fat recipe this way!

I made this for supper it was yummy.

Baked Rigatoni and Meatballs

Ingredients:
Meatballs:
1 egg
1/3 cup onion, chopped
1/4 cup dry bread crumbs
2 cloves garlic, minced
3 tablespoons grated Parmesan cheese
1 teaspoon oregano
salt and pepper
1 pound ground beef

Pasta:
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
3 cups sliced mushrooms
1 green pepper, chopped
2 teaspoons basil
1 teaspoon oregano
salt and pepper
1 can (28 oz.) stewed tomatoes
1 can (5 1/2 oz.) tomato paste
3 1/2 cups rigatoni pasta
1 1/2 cups grated mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:
For meatballs: In a medium bowl, slightly beat egg, add onion, bread crumbs, garlic, Parmesan cheese, oregano, salt and pepper. Mix to combine, then mix in the ground beef. Shape into small meatballs using around a heaping tablespoon of mixture for a meatball.

For pasta: Heat oil in a large skillet. Brown meatballs on all sides and remove. Cook in batches if necessary.
Drain excess fat from the pan. Add onion, garlic, mushrooms, green pepper, basil, oregano, salt and pepper, plus 2 tablespoons of water. Cook over medium heat about 10 minutes until vegetables are softened.

Stir in tomatoes, tomato paste and meatballs. Simmer for 30 minutes.
Cook pasta and drain.

Add pasta to sauce and stir to combine. Transfer to a 2 1/2 quart casserole dish. Sprinkle the mozzarella cheese on top, then the Parmesan cheese. Bake at 400 degrees F. for 20 minutes. Makes 6 servings.

WOW everone! thanks for all of the recipies! My idea of baking cookies is taking it out of the packaging, cutting up the dough, putting the cookies on the tray, and the overcooking them so much that they are black!
Hopefully this thread might inspire me to cook up a storm. My b/f will be very impressed! THANK YOU!

Does anyone have a recipie for freezer pickles? I picked a bunch of cucs today and now I can't find my recipie. They're on the sweet side and its mostly the brine that I need help with. The recipie I used had sliced red/green peppers, onions and cucs in it. It was white vinegar that I used not cider vinegar.

I've done a search on the net and alot do come up, but I'd rather use a tested recipie.

If you can help, I'd really appreciate it!
